Since the Ballet Crypto app does not have a password or PIN code, couldn’t anyone who accesses my mobile device steal the coins stored on my Ballet Cold Storage card?

No, because your cold storage card's private key entropy and passphrase entropy are never stored on your device. They are stored on your physical Ballet card itself, and nowhere else. When you want to send a transaction from your Ballet Cold Storage card, the app will prompt you to enter the passphrase entropy and scan the private key entropy. At that moment, the passphrase entropy and private key entropy cryptographically sign the transaction, but they are erased from memory immediately, never stored on the device. To keep your coins safe, you only need to worry about the physical security of the Ballet card itself. If someone steals your phone, they will not be able to spend the coins stored on your Ballet card. You can just add your Ballet card to the Ballet Crypto app on your new phone.
